We start with organically grown whole yellow mustard seed, Brassica alba, known for its mild heat and mellow sweetness. The seeds are milled into a stainless steel tank with pure water, apple cider vinegar, sea salt and spices. It is blended and then smoothly ground on a stone mill. Then it is allowed to sit and meld for at least 48 hours before packing in glass jars. Commercial yellow mustards are often made with inexpensive mustard bran or a combination of yellow seeds and bran.
